Wholesome, energizing, delicious, and designed to feed a crowd— this oatmeal bake is easy to put together and a perfect way to start any day. Featuring the sweet, delectable gift of our warm season— Summer Peach. Midway through recipe design, I decided a hint of ginger would perfectly complement the sweet flavors of Summer Peach while adding interest to each wholesome bite of rolled oats and almonds. Finish each serving with a dollop of your favorite yogurt, whipped cream, or even ice cream (for dessert!). Note: Other stone fruit can be substituted.
Preheat oven to 375°F (rack in top third of oven) & butter inside of baking dish
Macerate Fruit w/ Candied Ginger:
Over medium heat, mix and melt sugar & ginger together until evenly combined and tacky. Remove from heat, add half of quartered peaches, gently fold peaches using spatula to coat with sugar, add second half of peaches, and fold until thoroughly coated. Set aside for approximately 30 minutes or until juices have pooled.
Mix Wet & Dry Ingredients Separately:
In one bowl, mix together oats, chopped almonds, baking powder, and salt together. In another bowl, whisk together maple syrup, kefir, water, egg, half of butter, and vanilla extract.
Put it All Together:
Pour and evenly lay your macerated peaches to cover the bottom of your buttered baking dish. Cover fruit with oat mixture and slowly drizzle kefir mixture over the oats. Gently hit the bottom of your dish against your counter to ensure even distribution of liquid through the oats. Drizzle remaining half of butter on top of oats.
Bake for 45 minutes:
Bake for allotted time or until top is golden brown and oat mixture has set. Allow to cool for a few minutes before serving.
Serve & Enjoy:
Serve alongside yogurt or cream to make it a complete, satisfying meal! Double it as a dessert by serving alongside ice cream for an amazing à la mode!
